Đậu đen rửa sạch, ngâm nước khoảng 4 giờ cho đậu nở ra hoặc ngâm qua đêm. Rau ngải cứu nhặt lá non, rửa sạch.
Đùi gà rửa sạch, ướp đùi gà với 1 muỗng cà phê muối, 1 muỗng cà phê hạt nêm, 1/2 muỗng cà phê bột ngọt cho thấm gia vị.
Xếp 1/2 rau ngải cứu xuống đáy nồi. Thêm đùi gà và đậu đen lên trên. Cuối cùng xếp một lớp rau ngải cứu lên trên. Cho nồi gà lên bếp, đun khoảng 3 phút cho gà ra xíu nước.
Đổ lượng nước vào xâm xấp. Cho nấm hương và gừng băm vào. Đun nồi gà sôi, vặn nhỏ lửa đun liu riu cho gà chín mềm khoảng 1 giờ. Khi nồi gà chín, nêm lại gia vị cho vừa ăn, tắt bếp.
